For birthday truffles, use funfetti cake mix.
For Christmas truffles, use gingerbread or spice cake mix.
For Chocolate truffles, use chocolate cake mix.
For vanilla truffles, use yellow or white cake mix.
Here are some TIPS for making these easy red velvet truffles:
Use FULL-FAT cream cheese because it leads to a richer texture and flavor.
CHILL the dough in the fridge for 30 minutes if the dough is SOFT and difficult to form into balls.
If the mixture is CRUMBLY, add milk (a little at a time), until it is easy to roll into balls.
Prior to dipping these truffles in melted chocolate, CHILL them in the freezer for about 30 minutes so they are firm and don’t fall apart.
Make sure to MIX together the ingredients properly so there are no lumps and the mixture is a smooth dough.
•You can ROLL these truffles in melted chocolate (white, semisweet or dark) or even cover them in sprinkles, shredded coconut, chopped nuts, mini chocolate chips or chocolate shavings.
You can also try various ADD-INS like mini chocolate chips or chopped pecans or pistachios.
If you have leftover red velvet cake, you can make truffles made with cake crumbs and some frosting.
If you have extra time, you can make no bake red velvet truffles from scratch but my cake mix truffles are so much easier and just as tasty.
I used just cream cheese in this recipe but instead of that, you can also make red velvet truffles with cream cheese frosting or red velvet cake pops with cream cheese frosting by using my best no fail best cream cheese frosting recipe.
While the risks associated with RAW flour and raw cake mix are LOW, you can take extra precaution by spreading the flour or cake mix powder on a cookie tray and baking for 5 minutes at 350° F.
INGREDIENTS
1 box Red velvet cake mix
1 cup Powdered sugar
8 oz Cream cheese Full fat
1/4 cup Milk As needed
1 cup Add-ins E.g. granulated sugar, powdered sugar, sprinkles, chopped nuts, shredded coconut
1 cup Chocolate Melted, For dipping, Optional
INSTRUCTIONS
In a large mixing bowl, add cake mix powder, powdered sugar, and mix until you have a ball of dough.
Tip: If dough is too crumbly, add a little milk to make it easier to handle.
Scoop out small portions of the dough and form little balls.
Roll them in powdered sugar or granulated sugar OR dip them in melted chocolate. Enjoy!
