HOW TO MAKE A MIRROR GLAZE CAKE – EASY MIRROR GLAZE

Mirror glaze or mirror glaze cakes also known a shiny cakes are the latest trend in the cake world. These pretty mirror cakes are so impressive and yet so easy to master. This simple, easy and effortless recipe with my tips and trouble shooting will show you how to make mirror glaze perfectly every single time.

Have you seen the hype about these mirror glaze cakes recently? Wow! It’s got to the latest craze in the cake world. Mirror Glaze aka Shiny Cakes.

There is Russian confectioner on Instagram that has these cakes and they just blow my mind every single time. These have been on my wish list for a while and I really wanted to make one and share the recipe with you too.


INGREDIENTS
For the glaze

  • Gelatin – 1 tbsp
  • Water – 1/4 cup water + 1/3 cup (divided)
  • Glucose or Light Corn Syrup – 1/2 cup
  • Sugar – 150 grams  (2/3 cup)
  • Condensed Milk – 100 grams (4 oz or 1/2 cup)
  • White Chocolate – 150 grams  (5 oz )

Method:

  1. Have all your ingredients ready so you do not leave out anything
  2. Pour 1/4 cup into the gelatin – let bloom/ soak
  3. In a heavy based sauce pan – add glucose, sugar, condensed milk and remaining water
  4. Let come to a boil on low to medium heat.
  5. Once all the sugar has dissolved – and the mixture has come to a nice slow boil.
  6. Take it off the heat. Let rest for a minute before you add the white chocolate.
  7. The heat in the mixture should be enough to melt the white chocolate.
  8. next add in the soaked/bloomed gelatin – Let it melt
  9. If you want strain the mixture to remove any undissolved gelatin or not melted chocolate.
  10. Divide glaze for a second color if you need.
  11. Color glaze and let come to room temperature.
  12. Use glaze as shown in the mirror at room temperature.
