There are seasons of life where certain tasks and jobs are much easier than others. As a work-at-home mom of 3 kids, one of which is a toddler who is home with me all day, I definitely have the temptation to order dinner out. The mental and physical energy it takes to plan out dinners, get the grocery list together, find time to go to the store (preferably without kids), prepare and cook the meals - I'll admit, some weeks I just struggle!

I will tell you though, the simple task of cooking dinner for my family makes me feel really good about myself. It may sound silly, but it's so true! Last week in particular, I was really feeling in the mood to get takeout Chinese food so I set out to try and recreate one of our favorites here at home. I kept it simple while my last grocery trip though Target: chicken thighs, rice, pineapple, onion, and my favorite Soy Vay Veri Veri Teriyaki sauce. 


You guys - this dinner was SO GOOD! Moist, flavorful, and that sauce is out of this world. Top it with some fresh sliced green onion!

Crockpot Teriyaki Chicken Thighs

Skinless bone-in chicken thighs slow cook with onion, pineapple, and teriyaki sauce and served over steamed rice.
prep time: 15 MINScook time: 4 hourtotal time: 4 hours and 15 mins

INGREDIENTS:

  • 1 onion, peeled and sliced into rings
  • 20 oz pineapple chunks, drained
  • 2 tablespoons olive oil
  • 8 - 10 bone-in chicken thighs, skin removed
  • 1 cup Soy Vay Veri Veri Teriyaki Marinade & Sauce
  • steamed brown rice
  • sliced green onion

INSTRUCTIONS:

  1. Place onion and pineapple in the bottom of a slow cooker.
  2. Heat oil in a large skillet over medium high heat. Cook chicken 4 minutes on each side to brown. Place over onion and pineapple in Crockpot. Pour sauce over chicken. Cook on high for 4 hours.
  3. Serve chicken over steamed rice with additional warmed teriyaki sauce and green onion.

Slow Cooker Teriyaki Chicken


One of the reasons why I really love this recipe is the cost - it's SO affordable and it makes plenty for our very hungry family of 5. This would easily work with any type of skinless chicken that's on sale, and actually the cheaper bone-in cuts work even better in the slow cooker because of the moisture it retains. I definitely recommend serving this with extra teriyaki sauce drizzled on top - yum!
