This recipe for Crockpot Beef BBQ is set it and forget it style! Beef roast slow cooks with vegetables, ketchup, brown sugar, and spices until it shreds wonderfully and is served on rolls!







I HATE chopping vegetables, you guys. I will seriously put off making a certain dinner some nights all because I don't feel like chopping vegetables. It's completely irrational and I'm a baby, but I HATE it!

I look at Reuben, our third little boy, and we watch him approach the "witching hour" every single night around 5-6 pm. My fellow parents of toddlers know exactly what I'm talking about. His new normal at the time of the night is spent walking around the house whine/crying at different levels of loudness for honestly no reason at all. Any sane person would think he might be hungry with this act. Tonight, for example, he ate an entire serving of this Crockpot Beef BBQ, part of a roll, and a cup of applesauce. Oh, and he washed it all down with a full 8 oz bottle of almond milk. 

The non-crying period lasted about 5 minutes. And then he was off walking whine/crying again...

Honestly? I think we all have a "witching hour" at that time of the night. I might not make laps around the house driving the rest of my family mad with the constant noise, but I will refuse to chop vegetables, darn it. At 6pm I'm JUST TIRED and everyone wants to eat, including me, and usually whatever I have planned sounds boring. See? Adult witching hour.






It's recipes like this Crockpot Beef BBQ that save my life during that time of the night. You guys, it literally slow cooks for 8 - 10 hours which means that by the time everyone in the family is getting tired and cranky, all you have to do if lift the lid and spoon it onto some rolls. Stick a handful of veggie chips next to it on the plate and you're done. DONE.

Crockpot Beef BBQ

Roast beef slow cooked in peppers onion, ketchup, brown sugar, and BBQ sauce and served in Kaiser rolls.
prep time: 10 MINScook time: 8 hourtotal time: 8 hours and 10 mins

INGREDIENTS:

  • 3.5 - 4 lb beef chuck roast
  • 1 green pepper, seeded and diced
  • 1/2 onion, diced
  • 20 oz bottle French's Ketchup
  • 3 tablespoons BBQ sauce
  • 1 tablespoon apple cider vinegar
  • 1/2 cup brown sugar
  • dash of hot sauce
  • 10 sesame seed hamburger rolls

INSTRUCTIONS:

  1. Trim larger pieces of fat off of beef roast and place trimmed beef into the slow cooker. Add in all the other ingredients on top of beef, besides rolls. Cook on low for 8 hours.
  2. With two forks, shred beef. Using a slotted spoon, place shredded BBQ beef onto rolls. Serve hot!

I didn't even mention the fact that this one makes plenty enough for leftovers, even with our family of 5! So lunch the next day is done, too - I love recipes like this!
