My mom holds Thanksgiving dinner at her house every year. Her house is always decorated so nicely and she has a large kitchen where everyone, even the kiddos, can eat comfortably. Of course I'm totally jealous of her double oven! That definitely makes preparing dinner for 14+ people way more feasible, that's for sure!

One thing that makes me wish we were having Thanksgiving dinner at my house is for all those yummy leftovers. Sweet potato casserole, stuffing, green beans, and of course - loads of turkey. For that reason, we usually find ourselves over at my mom's house in between shopping trips throughout that weekend. We just can't resist!


Creamy Easy Turkey Noodle Soup



It's one of those times of the year where you have classic comfort food casseroles that we typically don't make aside from Thanksgiving or Christmas. This year, though, I took advantage of the awesome turkey deals at our local grocery stores and scored a cheap one for us to enjoy into the New Year. Yay for yummy leftovers!

This Creamy Turkey Noodle Soup is the perfect recipe to have on hand for all that extra turkey you'll have next weekend. This is an easy one-pot meal that is ready in no time - perfect for a quick bite in between deal shopping!

Creamy Easy Turkey Noodle Soup

A delicious soup recipe using leftover turkey, carrots, celery, green beans, cream of mushroom soup, and chicken broth.

INGREDIENTS:

  • 2 tablespoons olive oil
  • 2 stalks celery, diced
  • 2 carrots, peeled and diced
  • 2 cloves garlic, minced
  • 2 14oz cans Swanson� Chicken Broth
  • 10.5oz can Campbell's� Cream of Mushroom Soup
  • 2 cups chopped cooked turkey
  • 14.5oz can Del Monte� Blue Lake� Cut Green Beans, drained
  • 1/2 cup extra fine egg noodles, uncooked
  • garnish: French's Crispy Onions

INSTRUCTIONS:

  1. In a large stockpot, heat olive oil over medium high heat. Add celery and carrots and saute until beginning to soften, about 7 minutes. Stir in minced garlic and cook for 1 minute.
  2. Whisk in chicken broth and cream of mushroom soup. Bring to a boil, then reduce heat and simmer for 20 minutes.
  3. Stir in cooked turkey, drained green beans, and egg noodles. Continue cooking an additional 10 minutes or until vegetables are tender and noodles are done.
  4. Serve bowls topped with crispy onions.
