What is it about fall that makes everyone want to get together and have fun? It's such a beautiful time of year. We're still in the midst of high heat days, which in our area is in the mid-80's. I know for some of you in the south that's not too bad, but it is for me! I'm ready for cool weather. And I am SO ready to turn off the central air conditioning in our house and open up all the windows for some fresh air. Doesn't that sound wonderful?
Just yesterday I was driving around our area running a few errands and I was so pleasantly surprised at how many roadside stands already had truck loads of pumpkins! When Paul and I were first married, it was our dream to move out of the city of Philadelphia and live here in Central Pennsylvania. We had both grown up in the city and then when we were first married, we both lived and worked in the city. We were so ready to move!
Sometimes I drive around our town now and I have to pinch myself that this is where we live! I know I'm biased, but I truly believe there is no better place to live in the fall. Of course I've already begun dreaming up some really yummy pumpkin ideas with all the beautiful orange and white pumpkins I've been spotting on the side of the road.
These Mini Cranberry Pumpkin Breads are absolutely perfect to begin your pumpkin baking this fall. One batch makes six mini breads, so keep one and give the rest away to family and friends!
Mini Cranberry Pumpkin Breads

Pumpkin bread with dried cranberries baked in miniature loaf pans for gift giving.
Ingredients: 3 cups sugar 4 eggs 1 cup pumpkin puree 1 cup oil 1/2 cup orange juice 3 cups flour 1 tablespoon pumpkin pie spice 2 teaspoons baking soda 1 teaspoon salt 1 cup Ocean Spray� Craisins� Dried Cranberries Instructions:
In the bowl of a stand mixer, beat sugar, eggs, pumpkin, oil, and orange juice.
In a separate bowl, stir together flour, spice, baking soda, and salt. Slowly add flour mixture to pumpkin mixture until moistened.
Gently stir in Craisins� Dried Cranberries.
Divide batter evenly among 6 mini foil loaf pans that have been sprayed with non stick spray.
Bake at 350 for 45-55 minutes or until a cake tester comes out clean.
Allow to cool completely before wrapping with wax paper and ribbon for gift giving.
I was able to find those mini foil loaf pans at a local grocery store outlet, but I've seen then at most major food stores. Grab strips of wax paper, burlap ribbon, and baker's twine and these make the perfect gift! You can also freeze them by wrapping in wax paper, and storing them in zip top freezer bags. I'm planning on making a double batch for the holidays ahead - I can't wait!
I absolutely LOVE using Ocean Spray� Craisins� Dried Cranberries in my baking, and even in my snacking. Their taste, texture, and color gives them that unique "zing" that everyone loves. I love buying in bulk at Sam's Club, but since Craisins� Dried Cranberries aren't available at some Sam's club locations, I'm excited that I can stock up at my local Giant Food Store.
