Happy National Rice Month! Were you aware that September is National Rice Month? Neither was I! I can tell you, though, our family enjoys rice as part of our meal or side dish several times each week.
Sometimes when these boys get home from school, I wonder if they ate their lunch and snack at all. They come home absolutely famished every single day! I'm really happy that they get a chance to expend all that energy on learning, playing at recess, and practicing their social skills with classmates and teachers. From the minute they come home they're asking for a snack and a drink, all the way up until dinner time.
I'm beginning to realize now that I need to make sure I'm planning some healthy and hearty meals for these boys, especially during the week when they're hours away at school each day. They need nutritious meals that will keep them full. And of course these meals need to taste delicious, too! Rice is a great wholesome option, and I paired these Crockpot Salisbury Steak Meatballs with Minute� Ready to Serve Rice - so easy and simple!
Crockpot Salisbury Steak Meatballs

Fresh ground beef meatballs cooked in a Crockpot with gravy and served over rice.
Ingredients: 2 lbs ground beef 1/2 cup Panko bread cumbs 1 oz package onion soup mix 1/4 cup milk 1/3 cup flour 2 10 oz cans cream of chicken soup 1 oz package au jus mix 3/4 cup water 6 Minute Ready to Serve Rice cups, prepared Instructions:
Mix ground beef, bread crumbs, onion soup mix, and milk. Roll into meatballs, dredge each meatball in flour, and shake off excess.
In a deep skillet over medium heat, brown meatballs turning as needed and working in batches. Transfer meatballs to the bottom of a Crockpot.
In another bowl, whisk together cream of chicken soup, au jus mix, and water. Pour over meatballs.
Cover and cook on high for 4 hours or on low for 6 hours. Serve over cooked rice.
