One of my favorite things in the world to do is to have people over to our house for dinner. I feel like we were in the midst of babyhood and toddlerhood for so long that we really never had dinner with other friends very often. It was only on the rare occasion that we pre-planned for my parents to babysit that we were able to meet up with friends for dinner.

And let me tell you, it was NEVER at our house! It's just craziness to have friends over to visit when little kids live there. I mean, cleaning ahead of time is a total waste of time because the house will be a complete mess again later the same day. Are the kids going to stay there during the visit or do you have a babysitter for them? And then forget the stress of actually having something tasty for dinner! Who has time for that, am I right?!

There are definitely times, though, when friends would pop over unannounced. Probably not the best idea with families of little children, but it did happen to us a few times. I will say, I sure wish I had this recipe for No Bake Tiramisu back then to throw together in minutes! Slices of Sara Lee pound cake drizzled with brewed coffee, layered with sweet cream cheese and whipped cream, and dusted with cocoa powder. This one is perfect for a potluck as well!

No Bake Tiramisu

Tiramisu no bake cake made with pound cake slices, cream cheese, whipped cream, coffee, and baking cocoa.

Yield: 12 servings

Ingredients:
16 oz Sara Lee frozen pound cake, thawed
16 oz cream cheese, softened to room temperature
1/2 cup plus 2 tablespoons sugar, divided
2 teaspoons almond extract
8 oz whipped cream, thawed
1 cup brewed coffee, cold
2 tablespoons cocoa powder
Instructions:






  • Slice pound cake into 30 even slices, set aside.
  • In a medium bowl, beat cream cheese, 1/2 cup sugar, and almond extract until creamy. Gently fold in whipped cream.
  • In a separate small bowl, stir together coffee and 2 tablespoons sugar.
  • Assemble cake by laying 15 pound cake slices in the bottom of a 9 x 13 baking dish, overlapping slightly as needed. Drizzle 1/2 cup of coffee over slices.
  • Spread half of cream cheese mixture over slices. Repeat a second layer using remaining pound cake slices, coffee, and cream cheese.
  • Dust top of cake with powdered sugar. Refrigerate until ready to serve.
