I've been blogging here at Mostly Homemade Mom for over 5 years - I can't believe it's been that long already. Over the past 5 years, I've been so fortunate to "meet" some wonderful people. I'm proud to be a part of such a talented community of bloggers!
One of my dreams when I became serious about this blogging idea, was to work for some of my personal favorite food brands. Getting the chance to write recipes for these brands and actually get paid to do that seemed like such a cool thing! I've said it before, but I feel like I have to pinch myself sometimes that this is my actual job!
One of the communities I've become a huge part of is Collective Bias. Through their talent and connections, I've been able to work with pretty much ALL of my bucket-list companies, some more than once, too! They even hosting the first blog conference I attended - SoFabU On the Road in NYC. I realized on my way home from that day, I've been seriously missing out by not attending all these years! The learning experience and connections I made with fellow bloggers with really priceless.

My apple contribution is this Caramel Apple Pie Fudge - I kid you not, this will be my go-to Christmas gift this year. I'm going to warn you - between the 4-minute pot stirring and beating the batter with a hand mixer, your arm WILL get a workout! But I assure you, one bite and you will realize how worth it the sore arm will be, promise!
Caramel Apple Pie Fudge

A stove top fudge recipe using apple pie filling, gingersnap cookies, white chocolate, and homemade caramel.
Ingredients: 12 gingersnap cookies, crushed fine 3 cups white chocolate chips 1/2 cup apple pie filling 3/4 cup butter 1 cup heavy cream 3 cups sugar 1 teaspoon cinnamon 1/2 teaspoon nutmeg 1/2 teaspoon allspice 1/2 teaspoon salt Instructions:
Line an 8 x 8 square baking dish with foil or parchment paper.
In a large mixing bowl, stir together gingersnap cookie crumbs, white chocolate chips, and apple pie filling.
In a large saucepan, heat butter, cream, sugar, spices, and salt over medium heat. Stir occasionally to evenly melt butter.
Once mixture comes to a full rolling bowl, continue to cook stirring constantly for 4 minutes.
Pour caramel mixture over chocolate chips. Beat with a hand mixer until chocolate chips are completely melted and batter is smooth.
Pour into lined baking dish. Refrigerate at least 3 hours before slicing into pieces. Store in a container with a lid.
It's a bit hard to tell from the photos, but there are actual pieces of apple pie filling throughout the fudge - it tastes incredible!
