Fall has officially begun, here in Central Pennsylvania. The high temperature as far as my app will let me go, is in the 70's. I let out an audible "AAAHHHH" on Saturday when I got in the car with the boys. Fall is my favorite, but of course, you knew that already. 

Something that becomes SO HARD in the fall though is making a weekly menu plan and sticking to the plan. The nicer weather, and the fact that the buggies have mostly all left until next year, make me want to DO ALL THE THINGS. I'm serious! This past weekend, we took the boys and my adorable nephew to a local farm that has activities and play areas for kids. This upcoming weekend we have a Great Pumpkin 1st Birthday Party planned for Reuben, and then a square dance on Sunday at our church.

And that's just in one week!



Recipe for Roasted Asparagus



I'll be honest, I'm usually so tired from all the fun activity that we opt for getting delivery. I mean, when you're literally out all day, who wants to stand on your already tired legs and cook over a stove for an hour or so? Not me, I tell you! These are the nights when I'm SO thankful to have something easy to throw in the oven, a great veggie side dish that takes less than 5 minutes to prepare, and every has a delicious, filling dinner. That's what a call a success, wouldn't you?

Roasted Asparagus Parmesan

Fresh asparagus spears tossed in olive oil, garlic salt, and grated Parmesan cheese and roasted in the oven.

Yield: 4 servings

Ingredients:
1 lb asparagus spears
2 tablespoons olive oil
2 teaspoons garlic salt
1/2 cup grated Parmesan cheese
Instructions:


  • Trim 1/4 inch off the ends of each spear of asparagus. Place trimmed spears into a lined cookie sheet.
  • Drizzle with olive oil, turning to coat. Sprinkle half of garlic salt and Parmesan over asparagus.
  • Turn spears over and sprinkle remaining garlic salt and Parmesan.
  • Bake at 350 degrees for 15 minutes. Cool slightly before serving.

    Roasted Parmesan Asparagus



    I served this alongside one of my favorite main dish shortcuts - Barber Foods Broccoli & Cheese Stuffed Chicken Breasts. I usually pick a few boxes up in the frozen food aisle during my grocery trip through my local Giant Food Store. I just love that in a short amount of time, I'm able to serve my family some delicious chicken straight from the freezer - leaving me with plenty of time to take care of all the other time-consuming tasks of a busy school night!

    Preparation is so simple - just remove from the pouches and place frozen raw stuffed chicken breasts onto a cookie sheet, pop in the oven preheated at 375 degrees, and they're done in around 35 - 40 minutes! For this dinner, I cooked the chicken first, then reduced the heat to 350, and baked the asparagus. I covered the cooked stuffed chicken breasts with foil to keep the heat in. Dinner was SO yummy - my kids asked for seconds, score!!
