7 LAYER DIP

Everyone out there has their own version of a 7 Layer Dip. I know my dad has good one, but it’s a close second compared to this one. What puts this 7 Layer Dip over the edge is the fresh avocado & tomato salsa. It’s pretty much tradition to have beans, cheese, sour cream and salsa on every 7 Layer Dip. It’s after those four staple ingredients that people start to play around with it, making it their own.

In our family, we have a few game day favorites. The kids and I love beans, so naturally, this dip is a must have. We also love queso. We’re the dip and dunk kind of people, including my hubby. But he hates beans. Luckily for him, in this recipe for 7 Layer Dip, the beans are at the bottom, so he can delicately remove everything on top and still enjoy it.

This 7 Layer Dip is served all year long in our home or taken to parties throughout the year. Since it’s a game day must-have and we love football, basketball and baseball {playoffs}, we pretty much could add this recipe to our monthly dinner rotation.

I love making a big deal for parties and small get-togethers at our home. We usually serve an appetizer before our meal, like this 7 Layer Dip, along with a variety of drinks, a main course, and of course a dessert shared quickly thereafter.

Typically, I know the game schedule of at least a few teams that I can plan for accordingly and make sure I have everything on hand.


Ingredients

  • 1 pound hamburger
  • 1 packet taco seasoning
  • 32` ounces refried beans
  • 16 ounces sour cream
  • 1 cup salsa
  • 1-2 cups lettuce shredded
  • 2 cups cheddar cheese shredded
  • Optional Avocado Salsa
  • 1/2 cup purple onion finely diced
  • 10 ounces cherry tomatoes cut in half
  • 1 lime juiced
  • 1/2 cup cilantro diced
  • 2 avacados diced

Instructions
Brown meat and drain excess fat, add water and seasoning. Stir to combine and cook another 2-3 minutes, set aside.

In a small mixing bowl combine avocado, onion, tomatoes and lime juice. Season with salt and pepper and toss to combine; set aside.

On a 10-12 inch serving tray or platter evenly spread both cans of beans.

Top with taco meat.

Spread sour cream and salsa over taco meat. Top with the cheese and lettuce.

Evenly over the top of the lettuce add the avocado and tomato salsa.

Serve immediately or cover and top with foil, storing in the refrigerator until ready to serve, will stay fresh for an hour or two before the avocados start to brown.
