STRAWBERRY PIE CUPCAKES

My kiddos have made a few requests this past week for some cupcakes for dessert. I recalled how much the entire family enjoyed our Apple Pie Cupcakes this past fall. Since strawberries are a family favorite, I knew a strawberry cupcake would perfect.

I am so super happy I decided on strawberry. The frosting on these cupcakes was out of this world amazing. The addition of the strawberry pie filling in the middle made them that much more special too!

I use store bought cake mixes quite often. I can whip up a batch of cupcakes in no time at all. I sent the kiddos off to school and had these delicious cupcakes done quickly.

If you are needing a super strawberry dessert, I will highly suggest these little guys. They will be great for Valentine’s Day, summer BBQ, or just for after dinner dessert.


Ingredients

  • 1 box White or Yellow Cake Mix + box ingredients
  • 21 oz Strawberry Pie Filling
  • 1 cup softened Butter
  • 4 1/2 cup Powdered Sugar
  • 1 tsp Vanilla

Instructions

  1. Preheat oven and line muffin tins with paper liners.
  2. Prepare batter according to box directions.
  3. Fill liners 2/3 full and bake according to box directions for cupcakes.
  4. Allow to cool completely.
  5. Place pie filling in food processor and pulse several times to finely chop.
  6. use a knife to core out a plug in the middle of each cupcake and fill with pie filling.
  7. Place just the top of plug bake on cupcake.
  8. Whip butter until smooth.
  9. Add 8 tablespoons of chopped pie filling and vanilla to butter and beat to incorporate.
  10. Gradually add powdered sugar and beat until blended.
  11. Transfer to piping bag and frost each cupcake.
  12. Garnish with fresh strawberries if desired.
