Cinnamon Sugar Yeast Rolls

Friends, my niche here on Mostly Homemade Mom is to share some awesome dinner, dessert, side dish, etc. recipes using my favorite shortcuts to get you in and out of the kitchen in a short amount of time. All with the satisfaction of serving your family and friends some delicious "mostly homemade" dishes. During the busy holidays, Thanksgiving and Christmas, I really lean on my shortcut recipes to get the bulk of the cooking done because I love trying and creating some new, completely homemade recipes as well.

There's just something about the warmth of the holiday season that makes me want to connect with my inner homemaker - ha!

As far as yeast is concerned, however, I used to say quite famously in my posts that I just plain don't get along with yeast. After now being successful with yeast more times than my previous failures, I can tell you that with my experience I've learned two things: practice really does help, and it can smell fear. I'm not sure what it is with yeast, but when it senses your stress and urgency, it won't rise. Even if you've just bought it and the temperature is perfect. Printers act very similarly in our household, strange as it is!

I do have a couple tips to share with you to make this Cinnamon Sugar Yeast Roll recipe go much more easily. First, when you're measuring out your flour, fluff it up with a spoon. Then, scoop up some "fluffed" flour into your measuring cup, don't dip the measuring cup into the flour. You want light and fluffy rolls, so measure the flour out in the same way. Once the measuring cup is filled, then go ahead and level it off with a knife.

Second, make sure you have several clean and dry bowls to use for measuring, pouring, and kneading. I have this beautiful set of Vintage Charm inspired by Pyrex mixing bowls that I used when making this recipe. I really am in love with the vintage stripe pattern in these beautiful bowls - it really helps to just have when you need ready to just jump right in and get started. One bite of these delicious rolls and you'll realize how worth it they are!

Cinnamon Sugar Yeast Rolls

Easy yeast rolls with a sweet cinnamon sugar topping for a great side dish or brunch recipe.
prep time: 45 MINScook time: 20 MINStotal time: 65 mins

INGREDIENTS:

For Rolls
  • 2 1/2 cups flour, divided
  • 2 tablespoons sugar
  • 1 packet rapid rise yeast
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1/4 cup water
  • 2 tablespoons butter
For Topping
  • 1 egg, beaten
  • 1/4 cup sugar
  • 1 tablespoon cinnamon
  • 2 tablespoons butter, melted

INSTRUCTIONS:

  1. In the bowl of a stand mixer with the dough hook attached, stir together 3/4 cup flour, yeast, sugar, and salt.
  2. In a separate small bowl, mix milk, butter, and water. Microwave 15 seconds at a time until liquid is very hot, but not scalding - about 120 - 130 degrees, I usually just test it with my finger. *Note: butter will not be completely melted.
  3. Pour this into the mixer bowl and turn on medium speed, scraping the sides, until you have very wet dough. Next, add an additional 1 1/4 - 1 3/4 cup flour until the dough cleans the sides of the bowl and it comes together in a ball.
  4. Set your mixer on medium speed and set the timer for 8 minutes allowing it to knead the dough. Transfer dough to a separate bowl, cover with plastic wrap, and allow to rest 10 minutes.
  5. Cut dough into 12 equal balls and place in a greased square baking dish. Cover and set in a warm place for 30 minutes or until doubled in size.
  6. Brush tops with beaten egg. Combine sugar and cinnamon and sprinkle evenly over the tops of the rolls. Bake at 375 degrees for 20 minutes.
  7. Drizzle melted butter over rolls and allow to cool, at least slightly, before serving.

I am absolutely floored with how pretty these Vintage Charm mixing bowls are in person. I actually spotted them in a store near me a few weeks ago and the display literally stopped me dead in my tracks.
