Similar to our Butter Pecan Ice Cream Muffins recipe, these Surprise Inside Cupcakes use melted ice cream to replace the liquid ingredients in the batter, resulting in a more dense and ultra flavorful cupcake. The combinations are endless, so if you’re not a chocolate fan you can substitute any of ENLIGHTENED’s delicious ice cream flavors.
But really, the BEST part about this recipe is that you get to fill the cupcakes with sprinkles! Cut into the finished product and they’ll come pouring out. These Surprise Inside Cupcakes are a fun dessert to serve to unsuspecting friends & family. They’re in for a treat!
Ingredients
- 1 pint ENLIGHTENED Fudge Brownie Ice Cream
- 1.5 cups self-rising flour
- 1 tablespoon coconut oil
- Sprinkles of your choice
- Frosting of your choice
Directions
- Preheat oven to 350 degrees. Mix completely melted pint of ENLIGHTENED Ice Cream with flour and coconut oil. Mix until well combined.
- Place baking cups into muffin pan. Distribute mix evenly into baking cups and bake at 350 degrees for about 15-20 minutes, or until a knife comes out of batter clean.
- Remove from oven and let cool. Cut off tops of cupcakes and put aside. Using a knife, cut a 1-inch deep hole into the center of each cupcake. Fill with sprinkles.
- Place tops of cupcakes back over the open holes and cover with icing.
- Garnish with sprinkles and enjoy!
