SPANISH MANTECADOS COOKIES RECIPE

Mantecados is a name for a variety of Spanish shortbreads that includes the polvorón – a type of heavy, soft and very crumbly Spanish shortbread made of flour, sugar, milk, and nuts. Under the name Mantecados, these sweets are a traditional preparation of other areas of the Iberian Peninsula. In Cuba, Mantecado is an ice cream and in Spain it may be also the name given to a kind of sweet sherbet. In the Philippines, Mantecado is a popular and traditional ice cream flavor, characterized as a mixture of vanilla and butter.

These Mantecados Cookies are commonly served during Holidays and are popular in Spain.


Ingredients
2 1/3 cups melted shortening
5 cups all-purpose flour
½ oz anise extract
1 ¼ cups white sugar
¼ tsp ground cinnamon
Instructions
Preheat the oven to 250 degrees F.
In a bowl, combine the flour, sugar, and cinnamon together.
Add the melted shortening until all is mixed in well.
Stir in the anise and knead for 5 minutes.
Roll into 1 inch balls and place on an ungreased cookie sheet, 2 inches apart.
Place a blanched almond on top of each cookie and push down slightly.
Bake for 30 minutes.
When done, let cookies cool on cookie sheet for 30 minutes.
