Lately, I've been trying to be MUCH better with using up the things we have hanging out in the fridge. There were a few weeks in a row recently where I had to just throw several things away because it had gone bad before we had a chance to use it. In our house, this is mainly with fresh vegetables.
With some things, I will admit, it's hard to avoid. Spinach is one of those things. I think it's because it seems like it's only sold in HUGE bags! Thankfully, it's super cheap year-round in my area. But it always makes me feel so guilty when I've only used at most 1/3 of the bag, and then the rest gets thrown out. It's like I'm just throwing money in the trash can!
I do eat lots of fresh salads during the week, but I really just don't enjoy raw spinach. I love it cooked and I will often sneak it into lasagna or other pasta dishes, mostly unbeknownst to my family. I'm telling you one thing though, these Spinach Dip Stuffed Mushrooms will ALWAYS been on the menu if I have fresh spinach on my grocery list!
