Almost four years ago, I posted my recipe for Cheesy Stuffed Pepper Casserole and clearly you all have loved it just as much as my family did - and still does. That recipe post still gets a lot of traffic every single day! If you haven't tried that one, it's essentially un-stuffed peppers in a casserole dish with the usually filling ingredients. You really need to put that one on your menu plan ASAP!

A few months before that, I had posted the recipe Chicken & Cornbread Stuffed Peppers for you as well - that is SO GOOD, too! Definitely a fun twist on traditional stuffed pepers. The addition of the cornbread mix, too makes that one over the top!

I'm back again with my favorite stuffed peppers, this time with no rice and a purely meatloaf mix filling for the peppers. I have fond memories of my mom's meatloaf growing up. She made this sweet brown sugar tomato sauce that was just amazing. And clearly you can see how much I love stuffed peppers! This recipe mixes the two and hits it out of the park for a fun and different family dinner and is just really simple to put together.

If you're on a low carb diet, feel free to replace the Panko bread crumbs with a low carb or healthy carb alternative. I like using ground up old fashioned oats - I just grind them to a fine powder using my Ninja blender (affiliate link). Or you could let your favorite low carb pita bread harden on the counter and crumble that for bread crumbs - my favorite brand is Joseph's Pita Bread (affiliate link) - they make great bread crumbs. Either way, these peppers are going to be an impressive dinner for your family!

Meatloaf Stuffed Peppers

Meatloaf mix with ground beef, bread crumbs, egg, and seasonings stuffed into green peppers and topped with crushed tomatoes.
prep time: 10 MINScook time: 1 hourtotal time: 1 hours and 10 mins

INGREDIENTS:

  • 1 lb ground beef
  • 1/2 cup panko bread crumbs
  • 1/4 cup ketchup
  • 3 tablespoons dried, minced onion
  • 2 teaspoons Worcestershire sauce (affiliate link)
  • 1 egg, beaten
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 5 medium green peppers, tops removed and seeds discarded
  • 15 oz can crushed tomatoes, divided
  • grated Parmesan cheese

INSTRUCTIONS:

  1. In a large mixing bowl, combine ground beef, bread crumbs, ketchup, Worcestershire sauce, egg, and seasonings. Divide meat mixture evenly among peppers. Make a small slice in the bottom of each pepper to allow fat to drain from the meat as it cooks.
  2. Spread half of the crushed tomatoes into a square baking dish. Arrange stuffed peppers over crushed tomatoes in dish and spread remaining tomatoes over peppers.
  3. Bake at 350 degrees for 50 minutes. Sprinkle Parmesan cheese over peppers and bake an additional 10 minutes. Allow to cool slightly before serving.
