Cranberries are such a unique fruit to me. Overly tangy and somewhat bitter on their own, the minute you combine it with something sweet the flavor just shines out. My mom has made homemade cranberry sauce for years, but I will admit, give me the canned jellied sauce any day of the week! 

Sweetened dried cranberries I absolutely love. I use them in cookies especially because they pair so well with cookie dough of all kinds. When the beginning of November rolls around, I see bags of bright red cranberries in the produce section of my local supermarkets and I always grab one or two - even though, for the most part, I don't really know what to do with them!

Cranberry Ambrosia Salad

A fresh cranberry salad with Cool Whip, cranberries, crushed pineapple, and marshmallows.

INGREDIENTS:

  • 12 oz package cranberries
  • 20 oz crushed pineapple, drained
  • 1 cup sugar
  • 1 cup Cool Whip
  • 3 cups miniature marshmallows

INSTRUCTIONS:

  1. Place cranberries in a food processor or blender and process until well chopped.
  2. Combine cranberries and crushed pineapple. Stir in sugar, cool whip, and marshmallows.
  3. Cover and refrigerate two hours or overnight. Serve cold.
