I know when we usually think of pumpkin as an ingredient, sweet cinnamon fall flavors come to mind: pumpkin pie, pumpkin pudding, pumpkin cheesecake. And of course, the Pinterest famous Pumpkin Spice Latte. All sweet and ALL good if you ask me! But pumpkin isn't just good for sweet autumn inspired desserts! If you haven't tried pumpkin in a savory dish, you're going to have to just trust me on this one. Pumpkin brings a creamy texture to dinners and naturally thickens soups, stews, and chilis without adding fat. 


And the flavor just pops, especially with taco seasonings. I snagged some great Clover Valley brand ingredients during my last trip to my local Dollar General and came up with this AMAZING dinner idea for Pumpkin Sloppy Joes! I find myself in Dollar General regularly just checking out the newest items they have and then grabbing a few things for dinner as well. Clover Valley Taco Sauce and Condensed Tomato Soup, along with ground beef, pumpkin puree, and cheddar cheese slices - a quick skillet meal idea right here.  


Pumpkin Sloppy Joes Recipe


Is there an easier weeknight dinner than sloppy joes?? I think not! I keep our favorite sloppy joe recipe in our regular dinner rotation and for the fall, I'll definitely be swapping that out for these delish Pumpkin Sloppy Joes. I served ours with sweet potato fries and sliced cheddar cheese to go with the festive orange theme!


Pumpkin Sloppy Joes

A simple skillet sloppy joe dinner with ground beef, taco sauce, and pumpkin puree.

Prep time: 00:00, Cook time: 00:20, Total time: 00:30
Yield: 8 sandwiches

Ingredients:
2 lbs ground beef, browned and drained
1 cup Clover Valley taco sauce
10 oz can Clover Valley condensed tomato soup
1/2 cup canned pumpkin puree
1 tablespoon dried, minced onion
8 slices Clover Valley cheddar cheese
8 hamburger buns
Instructions:

  • Brown ground beef in a large, deep skillet. Drain and return to pan.
  • Stir in taco sauce, tomato soup, pumpkin puree, and onion. Simmer for 20 minutes.
  • Serve on hamburger buns with slices of cheese. Keep leftovers in the refrigerator.

The boys were REALLY excited to try these sandwiches and they absolutely loved them. A messy, sloppy dinner is always delicious in their book - and I have to admit, I think I agree. I'm actually planning on serving these yummy sloppy joes on Halloween before we go trick or treating - I'm already excited!
