REESE PEANUT BUTTER BROWNIES

I’ve never been a huge fan of Reese’s Pieces, but that’s never stopped me from eating half a bag of them whenever I decide to bake with them. While Reese’s cups make a delicious addition, I just love the color that Reese’s pieces give desserts. If you’re less concerned about a fun appearance, you can always substitute with regular Reese cups!

To be honest with you, I have an addiction to making brownies and I tend to find my inspiration from whatever I have lying around. For example, I have some salted caramel chips that need to be used up and what better way to do that than with a salted caramel brownie?! Stay tuned.

I whipped these up for a new coworker’s welcome luncheon. They were ridiculously huge and over the top but that’s the way I like my desserts. Is there really any other way to eat them?

Ingredients
Brownies

1 cup butter, melted
2/3 cup cocoa powder
4 eggs
2 cups sugar
1 cup flour
1 tsp. vanilla
1/2 tsp. baking powder
1/2 tsp. salt
1 cup chocolate chips
Peanut Butter Frosting

  • 1/2 cup unsalted butter, room temperature
  • 1 cup peanut butter
  • 3 – 3 1/2 cups powdered sugar
  • 2 tsp. vanilla
  • pinch of salt
  • 3 tbsp. heavy cream
  • Reese Pieces, if desired
  • 1 cup semi-sweet chocolate chips, if desired

Directions
Preheat oven to 350 degrees. Lightly grease a 9 x 13 baking pan. Use a 9×9 pan if you want thicker brownies!
Melt the butter in the microwave and set aside. Whisk together the cocoa powder, eggs, sugar and vanilla. Once combined, add in the melted butter.

Using a wooden spoon, add in the flour, baking powder and salt mixing until just combined. Spread the batter over the pan and bake for approximately 35 minutes until a toothpick inserted into the center comes out clean. Remove from oven and let cool.

For the frosting, beat the butter and peanut butter in your stand mixer until smooth. Slowly add in 2 cups of the powdered sugar. Add in the vanilla and salt. Add in the rest of the powdered sugar scraping the sides of the bowl frequently to make sure it’s well-combined. Add in heavy cream as necessary to create a smooth and creamy texture.

Spread the frosting over the brownies and decorate with the extra Reese’s Pieces. To melt chocolate, place in a bowl and microwave in 30 second intervals stirring in between until fully melted. Drizzle with the melted chocolate, slice & serve!
