Although a cosmopolitan cocktail is usually made with a splash of cranberry juice, I wanted to go a sweeter route with this cosmopolitan cupcake recipe and opted for a homemade cream soda syrup instead.
I made the cream soda syrup by simply boiling down a few cups of cream soda until it had reduce in volume by half. This syrup is delicious added to drinks, poured over top of ice cream, or incorporated into baked goods like these! Of course, you can make your own syrup from scratch using vanilla, water, and sugar but I wanted to keep that bright pink colour from the store-bought cream soda.
I followed the same method that I used to make our Coca-Cola Cupcakes and simply added the boiled down cream soda to a box of white cake mix. I love the pink colour of the cake that resulted, and you could even get away with calling these pink velvet cupcakes!
For the frosting, I used my standard buttercream frosting recipe but replaced the vanilla with this cream soda syrup. It resulted in a subtly softer frosting with a great cream soda taste.
Ingredients
- 1 box white cake mix
- 2 cups cream soda
- 1 cup butter
- 1-2 Tablespoons cream or milk
- 2 teaspoons cream soda syrup (1/2 cup boiled down)
- 4-6 cups icing sugar
Instructions
- Preheat oven to 325F and line a muffin tray with cupcake liners.
- Place your cream soda in a saucepan and place over medium high heat. Cook until the volume of the cream soda is reduced by half, about 20 minutes.
- Add the cream soda to the white cake mix and stir to combine, being careful not to overmix.
- Portion out the cake by ⅓ cup into the muffin liners and bake 18-22 minutes, until an inserted toothpick comes out clean.
- Cool on a baking rack as you prepare the frosting.
- Blend the butter, cream soda syrup and icing sugar, adding in more icing sugar or cream to achieve your desired consistency.
- Frost the cupcakes and add additional syrup as garnish, optional.
