MOCHA FUDGE PUDDING PARFAITS

I hope you had an amazing holiday season this year.

We really had a great time as a family relaxing, playing games, and eating way too many Peanut Butter Balls and Dippin Dot.  The only request my husband had for his December birthday was a case of Dippin Dots.  Did you know that they can be ordered online and shipped to your house?  Well, now you know.  You are welcome for that awesome tidbit of info.  Your parties will never be the same!

3 gallons later and our family has had their fill of those little icy balls.  Well, maybe the rest of them aren’t ready to admit that, but I can honestly say I’m ready for some healthy eating this coming month.

Don’t kill me just yet.  Want to know a little secret about these parfaits?


Ingredients

  • 10 chocolate cream filled cookies, crushed
  • 1 - 8 ounce package cream cheese, softened
  • 1/4 cup sugar
  • 2 Tablespoons milk
  • 2 teaspoons instant coffee
  • 2 cups Cool Whip, divided
  • 1 - 3.4 ounce box instant Chocolate Fudge Pudding mix
  • 1 1/2 cup milk
  • chocolate covered coffee beans

Instructions

  1. Beat the cream cheese and sugar until creamy. Dissolve the instant coffee in the milk. Pour into the cream cheese mixture and beat again until creamy. Fold in 1 1/2 cups Cool Whip.
  2. Whisk together the milk and pudding mix. Refrigerate 5-10 minutes.
  3. Layer the cookie crumbs, coffee cheesecake, and pudding into 6 large parfait glasses. Top with the remaining Cool Whip and coffee beans. Refrigerate until ready to serve. Makes 6 large pudding parfaits.

Notes

*Feel free to use fat free milk, sugar free pudding, light or fat free cream cheese, fat free Cool Whip, and sugar free cookies to create a dessert that is lower in calories.
