Healthy Chicken Cacciatore Soup Recipe � All the classic Italian flavors of Chicken Cacciatore in a lean and tantalizing pot of soup!
Ingredients:
- 2 boneless, skinless chicken breasts, cubed
- 1 tablespoon olive oil
- 1 tablespoon butter
- 4-6 cloves of garlic, minced
- 1 large onion, chopped
- 1 cup of celery, chopped
- 1 cup of carrots, chopped
- 1 medium zucchini, chopped
- 8 ounces crimini or button mushrooms, sliced
- 2 � 14 ounce cans of diced tomatoes (with garlic and herbs for added flavor)
- 1 � 28 ounce can of tomato sauce
- 6 cups chicken stock
- 1 cup of white or red wine
- 1/8 � 1/4 teaspoon crushed red pepper flakes
- 1 tablespoon Italian seasonings
- 1 bunch of fresh basil leaves, chiffonade
- 2 cups of small dried pasta
- 1 cup shredded parmesan cheese
- Salt and pepper
Directions:
- In a large stock pot brown the chicken in oil and butter over medium heat.
- Add the garlic, onions, celery, and carrots. Saut� for 3-5 minutes, then and 1 cup of the stock simmering for 3 minutes.
- Add everything except the fresh basil, parmesan cheese, and pasta. Stir in 1 teaspoon salt and 1/2 teaspoon ground black pepper. Simmer for 10 minutes
