Double Chocolate and Vanilla Cheesecake

Double chocolate and vanilla cheesecake is to die for! Here it is Valentine’s Day and I know that you are going to want to make this double chocolate and vanilla cheesecake for your Valentine!!! It is so rich and creamy, loaded with yummy chocolate, and then topped off with more chocolate. You can garnish it with white chocolate or even a beautiful raspberry. I like to add the raspberry because it is so pretty and makes a nice contrast!

We don’t really celebrate Valentine’s Day around here so much, but I have decided it is a great day to let others know that you care about them and that you are thinking about them, whether you do it with a note, or a double chocolate and vanilla cheesecake. We all have different love languages and some are physical gifts, there are words of affirmation, touch, gifts of service (if anyone wants to come and do my dishes)??? and last but not least, is the gift of time. Wow, that is a big one. It seems that the more conveniences that we have, the more we fill our time with other things like social media, or going to the gym. Growing up on a farm, that was going to the gym all day long. Just look at all the money I saved. Ha ha. Hey and I bet you didn’t know that the school counselor, when he would call me in, would embarrass me and say, you really should try out for the football team, your muscles are bigger than most of the team. I wish I had that problem now. In fact, now it is the opposite. Now I have grandma arms. My muscles all fell the other way.:)


Ingredients

  • 1½ cups finely crushed creme filled cookies or graham crackers
  • 2 Tablespoons margarine or butter, melted
  • 3 (8 ounce) packages cream cheese, softened
  • 1 (17 ounce) can Sweetened Condensed Milk (not evaporated milk)
  • 4 eggs
  • ⅓ cup unsifted flour
  • 1 Tablespoon vanilla extract
  • Chocolate Glaze:
  • 2 (1 ounce ) squares semi-sweet chocolate, melted
  • ¼ cup whipping cream

Instructions

  1. Preheat the oven to 350 degrees. Combine crushed cookies and butter; and then press firmly into the bottom of a 9 inch spring form pan.
  2. In a large mixing bowl, beat the cream cheese until nice and fluffy.
  3. Gradually beat in the sweetened condensed milk until smooth.
  4. Add the eggs, flour and the vanilla and mix them well.
  5. Divide batter in half.
  6. Add the chocolate to one half of the batter and mix well.
  7. Pour the chocolate batter in the the spring form pan on top of the crust.
  8. Then add the vanilla batter. Bake the cheesecake for 50 - 55 minutes or until center of the cheesecake springs back, or when you check it with a wooden pick it comes out clean.
  9. Cool.
  10. Top with Chocolate Glaze (recipe below).
  11. Chill.
  12. Keep in the refrigerator.
  13. Chocolate Glaze:
  14. In a small saucepan, over low heat, melt semi-sweet chocolate squares with ¼ cup whipping cream.
  15. Cook and stir util thickened and smooth. Remove from the heat and spread over the cheesecake.
