Ahhh... the elusive date night. With three little boys, a house, and a blog to take care of, date nights have all but become a thing of the past in this house, unfortunately. 

About two months ago, we were attempting to get together for dinner with the Senior Pastor of our church and his wife. Oh my word, it was torturous! The texting, the messaging, the checking of several calendars back and forth - and it was completely the fault of our schedule that prevented us from getting together with them. Thankfully we were finally able to make a date and we had such a wonderful time with them.

The craziness of our life right now deters us from having a kid-free date night very often, I will definitely admit. It's just easier to have a night at home free from any extra responsibilities. A few weeks ago, we had some leftovers from a church event that was graciously given to us. When the kids were in bed, we enjoyed a mini buffet together while watching our favorite show. It was SO NICE. No hassle getting the kids dressed and diaper bag ready to go to their Grandparents' house. No stress making sure we're home in a reasonable amount of time. Just a night together, in comfy clothes, and yummy food.

We love seafood so much, that almost every "date night" around here includes shrimp - we are seafood addicts, for sure! This insanely easy Shrimp Scampi Tortellini Skillet absolutely qualifies as a date night meal, but what's even better is that it's easy and fast enough to be perfect for any other dinner during the week. In minutes from stove to plate, you'll absolutely love it!

Shrimp Scampi pasta recipe with tortellini, cherry tomatoes, basil, and Parmesan cheese.

Yield: 3 servings

Ingredients:
19 oz frozen cheese tortellini
12 oz frozen SeaPak Shrimp Scampi
8 oz cherry tomatoes, halved
3 tablespoons fresh basil, torn
1/2 cup shredded Parmesan cheese
Instructions:



  • Fill a large stockpot halfway with water, heat to boiling, and add frozen tortellini. Cook for 4 minutes or until tortellini are floating.
  • Meanwhile, place frozen shrimp scampi in a deep skillet preheated on medium high. Add cherry tomatoes and basil.
  • Saute, stirring occasionally, for 7-8 minutes.
  • When tortellini is done, add it to the shrimp skillet, turning to coat pasta with sauce evenly.
  • Serve immediately topped with shredded Parmesan cheese.
